Ingredients (2 portions)

cabbage white 600 gram
noodles 300 gram
butter 1 tablespoon
sugar 1 tablespoon
onion 1 piece
salt 1 pinch
pepper 2 pinch
bacon 50 gram
kümmel/caraway 1 pinch

Instructions (30 min. prep, 100 min. total)

  1. Clean and quarter the cabbage.
  2. Remove the trunk inside the cabbage.
  3. Slice the cabbage in 2mm strips.
  4. Salt, mix and press the cabbage.
  5. Rest the cabbage for 15 minutes.
  6. Cut the halved onions in 2mm strips.
  7. Heat the butter in a large pan.
  8. Caramelize the sugar in the hot butter.
  9. Fry the onions until golden brown.
  10. Fry the bacon until you cannot resist eating it.
  11. Fry some more bacon and leave it in the pan.
  12. When rested, add the pressed cabbage.
  13. Fry until cabbage is golden brown and soft.
  14. Cover and simmer for 60 minutes.
  15. Add pepper and salt.
  16. After 30mins heat the noodle water.
  17. Cook the noodles in salt water.
  18. Add the sieved noodles to the cabbage pan.
  19. Simmer for 10 minutes.
