Instructions (10 min. prep, 30 min. total)
- Warm up butter to be soft.
- Preheat the oven to 180 degree.
- Heat the oil in a frying pan.
- Brown all sides for approx. 6 mins only turning when there is a brown crust.
- Meanwhile mix butter, thyme, rosemary, salt and pepper and if chives.
- Knead the crust and spread across lamb racks.
- Place racks on a tray with aluminum.
- Insert the meat thermometer so that it does not touch the bone.
- Roast in the center of oven at 180 degree for approx. 20 mins.
