lamb racks with herb crust

Ingredients (2 portions)

Ingredients Quantity Unit
lamb rack 400 gram
olive oil 2 tablespoons
thyme 2 teaspoon
chives 2 teaspoon
rosemary 1 teaspoon
salt 1 teaspoon
pepper 1 pinch
butter 3 tablespoon
semmelbrösel 3 tablespoon

Instructions (10 min. prep, 30 min. total)

  1. Warm up butter to be soft.
  2. Preheat the oven to 180 degree.
  3. Heat the oil in a frying pan.
  4. Brown all sides for approx. 6 mins only turning when there is a brown crust.
  5. Meanwhile mix butter, thyme, rosemary, salt and pepper and if chives.
  6. Knead the crust and spread across lamb racks.
  7. Place racks on a tray with aluminum.
  8. Insert the meat thermometer so that it does not touch the bone.
  9. Roast in the center of oven at 180 degree for approx. 20 mins.
