Beef with broccoli

Ingredients (4 portions)

corn starch 1 tablespoon
soy sauce 1 tablespoon
vinegar chinese 1 tablespoon
beef 250 gram
garlic 2 cloves
oil 1 tablespoon
broccoli 500 gram
onion spring 1 stick
mushroom shiitake 250 gram
water 150 ml
coriander 1 bunch
[sauce]
soy sauce 3 tablespoon
vinegar chinese 3 tablespoon
broth 100 ml

Instructions (30 min. prep, 90 min. total)

  1. Cut the garlic in thin slices.
  2. Cut and separate the white and green spring onion parts into 5mm slices.
  3. Cut the beef into 1cm stripes.
  4. Mix the corn starch, soy sauce and chinese vinegar.
  5. Mix in the meat and garlic.
  6. Cover the marinate in the fridge for 1 hr.
  7. Heat the oil in a wok.
  8. Stir fry the broccoli for 2 min.
  9. Add the white onions and cook for 2 min.
  10. Add mushrooms and cook for 3 min.
  11. Add the water and bring to the boil.
  12. Simmer the vegetables over a medium heat for 10 min.
  13. Place vegetables in a bowl and cover.
  14. Heat a bit of oil in the same wok.
  15. Stir fry the meat for 2 min.
  16. Remove meat into vegetables bowl.
  17. Mix another sauce with broth, chinese vinegar, and soy sauce into the wok.
  18. Stir and boil to loosen bits stuck to the bottom of the wok.
  19. Reduce the heat.
  20. Add the vegetables and meat.
  21. Add a bit of corn starch to thicken.
  22. Stir and warm up everything
  23. Add green spring onion and coriander just before serving.
