Instructions (10 min. prep, 20 min. total)
- Cut the lemon grass along its length into two sticks.
- Peel the ginger with a teaspoon.
- Finely hack the ginger.
- Boil the broth with the ginger, lemon grass, sternanis, cinnamon, soy and fish sauce.
- Cut the optional meat into 5mm slices.
- Wash and extract leaves of the coriander and mint.
- Wash then cut onions into 5mm slices.
- In a separate pot, boil the eggs until soft as wax.
- When boiled, shock them with cold water. Yeah!
- Add noodles, mungo sprouts and onions to soup.
- Simmer for about 8 minutes.
- Cook rice noodles separately.
- Optionally, add the sliced beef.
- Peal the eggs and cut in halves.
- Serve soup immediately with eggs, coriander, mint and lime garnish.
