Gulasch

Ingredients (2 portions)

beef 700 gram
onion 700 gram
oil 2 tablespoons
paprika spice 3 tablespoon
flour 3 tablespoon
water 100 ml
broth 300 ml
kümmel/caraway 2 teaspoon
laurel 5 leaves
salt 5 pinch
pepper 40 corns
garlic 4 cloves
vinegar 2 tablespoons
[optional]
sour cream 200 ml
carrot 7 pieces

Instructions (20 min. prep, 150 min. total)

  1. Cut the beef into 3cm cubes.
  2. Heat oil or butter in frying pan.
  3. Fry crispy the beef in portions of 200g.
  4. Remove to side.
  5. Cut half onions into rings.
  6. Cut the onions into 3mm cubes.
  7. Heat 1 tablespoon of oil in a large pot.
  8. Fry the onions till golden brown. Watch closely not to burn them.
  9. Add meat back in.
  10. Cover and simmer at low heat for 1 hour.
  11. alternatively: Best in separate pan, add oil and at high heat fry the meat pieces till crispy.
  12. Mix all, reduce heat, prepare a glass with water.
  13. Add the paprika and flour into glass and stir up.
  14. Cut 2 garlic into thin slices.
  15. Keep 2 garlic cloves as whole.
  16. Add and stir in garlic slices, whole garlic cloves, laurel leaves, cumin, salt and pepper corns.
  17. Cover the pot and stir occasionally.
  18. Cut carrots into 1mm slices.
  19. Add carrots to pot and stir.
  20. Add 2 dashes of vinegar.
  21. Add 300ml broth.
  22. Openly simmer for 1 hour to soften the meat.
  23. Cover and simmer for another 2 hours.

Optionally soften the paprika with sour creme. Maybe more salt and vinegar as desired.
