Simple single-line instruction per line.
Warm up butter to be soft. Preheat the oven to 180 degree. Heat the oil in a frying pan. Brown all sides for approx. 6 mins only turning when there is a brown crust. Meanwhile mix butter, thyme, rosemary, salt and pepper and if chives. Knead the crust and spread across lamb racks. Place racks on a tray with aluminum. Insert the meat thermometer so that it does not touch the bone. Roast in the center of oven at 180 degree for approx. 20 mins.
